Carrots

The ancient Greek word for carrot , Philon, stems from the word "love" as it was once considered an aphrodisiac! This is one vegetable that we may take for granted, forget about or even consider insignificant as it is so common in our food system but it is actually quite important and powerful.

Carrots are rich in vitamin A, B, phosphorus, iodine, calcium, contains anti clotting and anti cancer properties. They can help with elimination, constipation and night vision. Look for the deepest color you can find for the highest antioxidant properties.

A super easy carrot recipe to make any night of the week and is great for kids that was given to me by my super chef girlfriend @carriedawaychefs is to simply boil carrots in heavily salted water until tender. They are surprisingly good! We also love roasted carrots that have been tossed in olive oil, salt and pepper.
