Ingredients
- 2 heads of cauliflower, chopped into florets
- 1 whole head of garlic
- 1 cup shiitake mushrooms, diced
- ½ onion, chopped
- ½ serrano pepper (optional — for a gentle heat and metabolism boost)
- 2 cups bone broth
- 1 cup water (adjust for desired consistency)
- Olive oil for roasting
- Sea salt and freshly ground black pepper, to taste
- Pumpkin seeds or chives, for garnish
Directions
- Roast the vegetables
Preheat oven to 400°F. Spread cauliflower florets on a lined baking sheet and drizzle with olive oil, salt, and pepper.
Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast alongside the cauliflower for 25–30 minutes, or until golden and tender.
- Sauté the aromatics
In a Dutch oven or soup pot, heat a drizzle of olive oil. Add onion and sauté until translucent (about 5 minutes).
Stir in serrano pepper, roasted garlic (squeezed from the skins), mushrooms, salt, and pepper. Cook for another 5–7 minutes until the mushrooms soften.
- Simmer the soup
Add roasted cauliflower to the pot and sauté together for 2–3 minutes to deepen the flavor.
Pour in 2 cups bone broth and 1 cup water. Bring to a gentle boil, then reduce heat and simmer for 15 minutes. Taste and adjust seasoning.
- Blend to perfection
Once cooled slightly, transfer soup to a blender (or use an immersion blender) and blend until smooth and creamy.
Garnish with pumpkin seeds and/or fresh chives. Serve warm and feel the nourishment.
