Ingredients:
1 cup cooked quinoa (cooled)
1 can chickpeas, rinsed and drained
1 cup cherry tomatoes, halved
1 cucumber, diced
1 red bell pepper, chopped
¼ cup red onion, finely diced
2 Tbsp fresh parsley, chopped
2 Tbsp fresh mint, chopped
3 Tbsp olive oil
Juice of 1 lemon
Salt + pepper to taste
Optional: crumbled feta (skip if dairy-free)
Directions:
In a large bowl, combine quinoa, chickpeas, tomatoes, cucumber, bell pepper, and onion.
In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
Pour dressing over the salad and toss well.
Sprinkle fresh parsley and mint before serving.
